Salad, With avocado, walnuts and gorgonzola, the weather is already filling your mouth? I get it and the funny thing is, this recipe came about a bit out of necessity, because I had all sorts of things in the fridge that really needed to be used up.
Have a nice lunch
A nice salad for lunch, how delicious is this?. And besides a pizza with gorgonzola, this cheese also goes great in a salad. If you still have an avocado lying around and maybe some walnuts, you can make this salad in no time at all.
Because you can take salads out of books, but you can also make your own, using whatever you have in the (cool) cupboard.

We want to eat healthier and healthier, and then in addition to our breakfast and dinner, we want something other than bread at lunch sometimes. But what do you? How about a healthy salad!
Recipe: Salad with avocado, walnut and gorgonzola
for two people:
- 70 grams of rocket or other mixed salad mix
- 1 avocado
- 40 grams of gorgonzola
- 2 handfuls of walnuts
for the dressing:
- 2 teaspoons of mustard
- dash of olive oil
Roast the walnuts briefly in a dry frying pan. Remove the skin from the avocado, and take out the stone. Cut the avocado into slices and the gorgonzola into pieces. Put the salad mix, avocado and gorgonzola together on a plate. For the dressing, mix the juice of one lime, mustard and olive oil together and sprinkle over the salad.
Finally sprinkle the walnuts on top.
Delicious with wholemeal bread or a wholemeal wrap.
I made this easy recipe with leftovers from what I had on hand. I got the dressing from a recipe once, but I really wouldn’t remember where.
